Diabetic Fruit Salad
To make a diabetic fruit salad, you need to make sure that you use as many unsweetened and sugar free non -fruit ingredients as you can in your salad.
Below are three simple diabetic fruit salad recipes which you can easily make at home. Just mix all the ingredients in a bowl and let it cool throughly in the fridge overnight. If you plan to use Jello pudding mix, make sure that it is sugar free. For canned fruits, make sure that they are the unsweetened version.
Recipe #1:
- 1 can unsweetened fruit cocktail, drained
- 1 can unsweetened peaches, sliced and drained
- 1 box Jello vanilla instant pudding mix (sugar free)
- 1 can unsweetened pineapple chunks, drained (save juice for pudding mix)
- 4 bananas, to be added just before serving
Recipe #2:
- 1 can unsweetened tidbit pineapple
- 1 can unsweetened mandarin oranges
- 1 large can unsweetened fruit cocktail in fruit juice
- 1 package Jello vanilla pudding (sugar free)
- 2 large bananas, to be added just before serving
Recipe #3:
- 2 apples, cored, peeled and sliced
- 2 oranges, peeled and sliced
- 1/2 cup fresh orange juice
- 2 tablespoons dried currants
- 1/2 teaspoon cinnamon
- 2 bananas, sliced, added last just before serving
